Ingredients
3-4 Diced Organic, Hannah Sweet Potatoes
2 Teaspoons Sea Salt
1 Large Lemon
1/4 Cup Chopped Parsley
1/4 Cup Chopped Cilantro
1 Large Garlic Clove
1/2 Cup Tahini
2 Teaspoons Melted Ghee
Preparation
Preheat oven to 400°F
Cut sweet potatoes into 1/2 inch thick medallions and place in ceramic pan
Melt tablespoon of ghee and drizzle over the potatoes
Sprinkle all potatoes with a pinch of sea salt
Place in the oven and cook for 30 minutes
Add tahini to blender
Add 1 large clove of garlic
Lemon juice from 1 whole lemon
2 teaspoons of sea salt
1/4 cup of parsley
Blend
Chop 1/4 cup cilantro and place on the side
Remove potatoes from the oven
Place on a plate evenly
Drizzle tahini garlic dressing all over potatoes
Top with chopped cilantro
Serve warm
